Kaluga

Huso dauricius. This is one of the most aromatic and rich caviars. Some tasters refer to it as ‘River Beluga Caviar’ due to its great similarities with the king of caviars. It has full-bodied and flavourful roe, as well as a yellow-brownish colour which, occasionally, turns grey. It measures around 3.2 mm. Endowed with such smooth and creamy texture, it creates a long-lasting flavour explosion in the mouth.
