Acipenser baerii. Its balanced and harmonious flavour, with delicate touches reminiscent of the sea, renders this caviar unique. This is a type of caviar with a creamy texture whose eggs explode gently in the mouth. Its shades vary depending on the light and the sturgeon from which they have been extracted, with a predominance of brown, black and dark grey colours. The size of each grain ranges from 2.5 to 3.5 mm.
