Huso x ruthenus. This beluga hybrid is very similar to its renowned ‘big brother’ in terms of taste and texture. It has a persistent flavour thanks to its intense and buttery hints. The size of its roe stands out, which is quite similar to that of beluga caviar, around 3 mm.
